When Life Gives You Lemons…

Taking time away from the Silver Plate kitchen, we’re headed to Cyprus for some inspiration. Wow. I knew it would be good but underestimated how fantastic the local produce is here. The lemons are simply fantastic. I thought about the lemons we often see in a pack of five in the supermarket and how disappointing they can be — no juice and dry. These lemons, the size of large oranges, are giving up so much juice. The zest is just so fresh. Just thinking of all the ways in which I could use these beauties. I’ve resolved to never again buy those cheap netted lemons but to choose juice-heavy, individual ones. We really should not tolerate substandard fruit and complain when the quality is poor. Wherever I see those lovely fresh ones with the leaves still attached, I’m going to take advantage and get some.

My Favourite Ways to Use Lemons

Best things I do with lemons:

  • In iced water to drink every day (simple but wonderful)
  • On salads — a quick squish to zing up even the most simple lettuce, cucumber and tomato
  • At the end of cooking so many dishes to brighten up the flavours
  • With roasted vegetables and chicken
  • Lemon curd (yummy and not difficult)
  • Grated rind goes in couscous, rice, butter compounds with parsley and thyme
  • Lemon drizzle cake (a family favourite)
